Simple Parsley Butter New Potatoes

 

 

 

Side dishes can be tricky for holiday meals. The last thing you want to do is spend all your time in the kitchen when you have guests. One reason I love new potatoes, besides the fact that they are delicious, is that there is no peeling involved. When guests are arriving, I never want to be up to my elbows in potato peels :-)

This recipe is simple enough for everyday dinner, but pretty enough to be the perfect side dish when entertaining. These potatoes are fluffy, buttery and so pretty with the green parsley. Fresh chopped parsley from your own herb garden is delicious, but even dried parsley from your pantry works fine too. Small redskin potatoes are also another pretty and delicious option.

 

Simple Parsley Butter New Potatoes

 

2 lbs new potatoes

1 stick butter (1/2 cup)

1/3 cup chopped parsley

Salt and Pepper


Scrub potatoes with vegetable brush and cut in half. Place in a medium pot and cover with cold water. Salt water generously and bring to a boil. Boil until fork tender (about 15 minutes) then drain water and place potatoes back in pot. While hot, toss with butter and parsley. Add salt and pepper to taste. Enjoy!

  16. I usually use dried parsley but for an appetizer recipe the other day I purchased fresh. Well I only needed three chopped sprigs and have this huge bag of fresh parsley to use up...was just reminding myself that I should make a batch of parsley potatoes and there was your post ! :)
