Top 3 Recipes in 2019

When I was blogging more often each week, I posted a lot more recipes than I do now.  But, my life changed since I started this blog in 2012 and the blogging world changed too.  I’ll never stop trying new recipes and even coming up with a few of my own; it’s just a different season of my life right now.  A lot simpler in every aspect.

The top three viewed recipes in 2019 were two savory and one sweet.  I find it interesting that a sheet pan dinner was the number one viewed recipe, because I have been saving and pinning quite a few of this simple type of cooking to try.  And, I love any three or four ingredient recipe and you have always responded well to those type of recipes too.  The shrimp recipe just fits our casual Florida lifestyle.   Maybe we are on to something?  Simple, quick, casual, but delicious cooking and baking.

Happy 2020!

Old Bay Shrimp

Do you ever wonder why you thought it would be too much work to make something and then when you give it a try, you wonder why you thought that?  Whenever we go to our favorite beach bars, (and the list is long) we usually order peel and eat shrimp to enjoy with our first drink.  We know which places have the best, which for us means fresh as possible and spicy, rather than bland.

I went to the Farmer's Market on Saturday morning and was able to get some freshly caught gulf shrimp, so I decided to give this method a try and prepared a simple, but delicious meal of veggies and peel and eat shrimp.  This recipe is so easy, so quick and has that perfectly spicy kick we love.  The only change I would make, to kick up the flavor even more, is instead of vinegar for the boil, I would use beer.  No more bland shrimp cocktail for us - this will be the only kind of shrimp I serve from now on.

Happy Wednesday!

Old Bay Shrimp

1/2 cup apple Cider Vinegar (or beer)
4 cups water
1/4 cup Old Bay Seasoning
4 cloves garlic
1 T cracked black pepper
1 lb fresh large shrimp (in shells)
2 T Old Bay Seasoning for tossing

Combine vinegar (beer), water, Old Bay Seasoning, garlic and pepper in a large soup pot.  Bring to boil over medium heat.  When water is boiling, add shrimp, cover and cook 5-6 minutes (until just pink).  Drain shrimp and toss with remaining Old Bay.  Place uncovered in a bowl and refrigerate until ready to serve. (We like it at room temperature, so just refrigerate until it cools slightly). Serve with cocktail sauce.  Enjoy!

Shrimp Boil in Foil Packets

Yum! I saw this recipe on a blog I follow and she raved so much about how good it was that I simply had to give it a try. Especially because now that we live in Florida, we eat a lot of shrimp and I would love some go to recipes for making it at home.

This recipe is very easy, fairly quick to put together and has really good flavor. There are instructions for cooking the ears of corn in the microwave, but I simply par boiled the corn and potatoes together in a big pot and that worked great. I didn't have lager, but used a citrus flavored beer that I had on hand, so I think most beer varieties would be fine. The main seasoning is Old Bay, but I think it could use a little more heat and would probably add some red paper flakes next time. Also, some good bread would be a great addition for sopping up some of the delicious juice.

I cooked the packets in the oven, since our grill is in the sun and it was very hot outside when I was making dinner. The flavor was still great, but the grill might give everything a little smokiness that would add to the flavor. .

This recipe (and cooking method) is going in meal rotation.

Happy Tuesday!
