Adding Some Green

 

I feel like shouting it to the rooftops, but we finally had a sunny day yesterday. It is amazing how a Monday morning doesn't seem so bad, when the sun is shining. After lunch with my parents, I decided to add a little green for St. Patrick's Day to the front porch. I like how this green color is a nice transition, from the red tones of Christmas and Valentine's, to the pastels of Easter.

We still have quite a bit of snow, but the shamrocks on this flag are a great contrast to the white ground cover.

I did a little update on a wreath I have been using for few years, by adding a burlap decorated letter to the middle. I saw this green burlap at Michaels and thought it would look interesting, rustic and somewhat unique. To make this, I simply traced the letter and used Mod Podge to adhere it to the top of the letter. I like that the edges are frayed here and there and the color stands out great against the white door.

Cashew Chicken - Crock Pot Version

 

Cashew Chicken cooked in the crock pot? I have to admit, I was a skeptic. This recipe on Pinterest caught my eye and since it was from a site I have found to have pretty good recipes, I decided to give it a try. It was really quick to put together, and since it only needed to cook 3 hours, on low, my late start getting it in the crock pot was no problem.

It turned out very good and I would definitely make this crock pot version again. The chicken had a great flavor, was just a little spicy and the addition of the cashews, at the end, kept them nice and crunchy. I also added some celery, right before serving, to give it even more color and texture. To keep things healthy, I used Splenda brown sugar, low sodium soy sauce and served the chicken with brown rice. My pin and the recipe can be found here.

Melissa sent me this photo from Florida, of her view of the Gulf of Mexico and I received it on my phone as I was walking, with a cold wind swirling around me and being very careful not to slip on the ice. I have to admit, I am a little jealous. She should have a great Spring Break, soaking up the sun and relaxing on the beach.

Mornings

 
 

The time of day that I cherish the most, is the early morning. The house is quiet, with a stillness not found during the rest of the day. As I drink my coffee, it is a time to reflect on how this new day will go, as well as reflect on how the day before has gone.

When I was diagnosed with Type 2 Diabetes, I learned that when food becomes your medicine, each morning, with every meal ahead of you, becomes a new chance, to either do better or celebrate the success of the day before. Healthy eating is a lifestyle and and each day is a chance to live that lifestyle to its fullest potential.

Every morning, I am optimistic that this day will be a good one. That there is the possibility to change the way you react to those around you and the way you approach problems. You can learn from how the day before went and begin with a fresh slate.

The mornings give you hope. I try to never bring the problems that occurred the day before to this new day. I leave the stress in the past and try to accept each day as an opportunity and a challenge. I take a deep breath, say a prayer and begin again.
