Raspberry Vanilla Overnight Oatmeal

 

 

 

There have been some pretty warm, but definitely humid days in the midst of all the rain we are experiencing and my usual hot oatmeal has not been as appetizing. I just love making one of these overnight oatmeal recipes to enjoy on summer mornings. This recipe sounded really good with the addition of raspberry jam and vanilla to add to the flavor. I am down to the last bits of my homemade jam and need to make more soon, but I had just enough of my Two Berry Freezer Jam to use in this recipe.

Besides being so delicious, the overnight oatmeal recipes that I have tried before are as quick as can be. You are just layering a few ingredients in a mason jar, screwing on the lid and placing it in the refrigerator. Overnight, the oats become creamy and soft and the flavors come together into something special. In the morning you just mix it together with your spoon and enjoy - no cooking involved.

 

Raspberry Vanilla Overnight Oatmeal

 

1/2 cup oatmeal

1/2 cup milk ( I used low fat )

1 T raspberry jam ( I used my homemade Two Berry Freezer Jam )

1/2 tsp vanilla

1/4 cup fresh raspberries

 

In a mason jar, add oats, milk, jam and vanilla. Shake until blended. Place raspberries on top, screw on lid and place in refrigerator overnight. Stir in raspberries when ready to eat the next morning.

  4. I loved cooked old fashioned oatmeal, in fact only kind I buy. Can you use this for recipe? I've been so tempted lately to try this as my raspberries and blueberries are coming on...instead I've been using my Greek yogurt. I'm also curious about the texture, does it taste like cold cooked oatmeal? Thanks ~ Mickie

  9. This one looks yummy! I'm imagining my oatmeal having a different flavor now, and the idea makes me want to actually try it. Oatmeal alone could be boring, so your idea of adding raspberry jam to it is just perfect to add taste to it. Thanks for sharing the recipe with us! :)
