Life Lately

 


Since my knee is much improved after PT, I am back to volunteering with Venice Area Beautification.  It is very satisfying to feel part of a team that really makes a difference.  It’s hot and sweaty work, especially in the summer months, but I love getting my hands in the dirt.  And, because I love new Florida experiences, I am going for an interview next week to be part of the horticulture volunteer team at Historic Spanish Point.  



Its been a full year now that I have been ordering a couple of meals each month from the meal delivery service Hello Fresh and we love it.  Last night I made Brown Sugar Bourbon Chicken Salad and it was healthy and delicious. There is always something a bit unique in the recipes and this salad had roasted carrots that took it to another level. I honestly can’t think of one recipe we have not found to be good and I enjoy the new tastes and style of step by step cooking.




We are excited to be changing our kitchen island from Corian to natural quartz.  Yes, we have a new home, but the design decisions had to be made really fast and there have been a few things we have decided to upgrade.  I was happy to find exactly what I was looking for with a white background and warm neutral tones (not gray).  Also not big movement in the veins, but not too busy as well.  It should be installed in about 2 weeks and I will post a kitchen update.




The Olympics have been fun to watch and bring back so many memories of gymnastics meets for both girls and swim and dive meets for Megan.  I was just talking about how it is the sounds for me that put me right back there watching. The sound of the jumps on the balance beam, the tumbling landings on the mat and the spring of the diving board.  I love watching young people who work so hard, achieve their dream and especially under so much pressure.  The world may seem crazy, but there are also so many great young Americans who we can be proud of.

  1. Yes, there is something about getting our hands dirty! Happy you are back busy helping make things beautiful! I haven't tried the food service but it sounds like something I would love too. Sounds really do bring back memories:) Enjoy your day dear friend, HUGS!

  2. I am so glad your PT has been effective and you can get back to the real business of living. I did Every Plate for a bit during the peak of the pandemic last year and might start again when we get into the fall. I love that the recipes come with it so you can duplicate later. I think Hello Fresh does the same.

    1. Hello Fresh doesn’t give the recipe, just a list of ingredients and instructions. But most would be easy to duplicate.

    2. we get the recipes for Hello Fresh in New Zealand... double sided A4 card, so can make again. The amount of packaging bugs me though.

  3. So happy your PT went well and you're back in action!! OK, can I just say how much I love Hello Fresh! It's so fun to get the box in the mail open it up and see all your meals just waiting to be sliced, diced and cooked. I did it for a while and still have the recipe cards for all the meals. I've even remade some of them. Your new counter top looks very, very similar to our new counters. We just remodeled our farm house and went with white cupboards and white quartz counters. The design of yours looks so much like mine. I absolutely love it! It has such a clean look to it.
    We've really been enjoying the Olympics as well.

    1. It is a fun way to cook and I am not a stock up type grocery shopper, so having all the ingredients brought to my door is my favorite. I was surprised how quickly I found the quartz I was looking for and I am excited to see it in place!

  4. Your new counter will be beautiful. The Olympics take me back to swimming with my oldest. We know several swimmers that are there, this might be the last Olympics that we actually know people, still so fun to watch but I get so nervous for them!

    1. The swim team was such a great experience for our whole family. It was truly a family affair and swimming produces great kids.

  5. The Olympics were so fun to watch. Different this year but as crazy as the world is right now it did my heart good to see nations coming together for this world-wide show. You must be so excited about the new counter tops! Can't wait to see the new look.
