Super Bowl Thoughts

 

 

 

We went to a friends house to watch the game, but I have to admit, I didn't watch much of the actual football. I didn't really have a preference for who won this year, so with the blowout score, it really didn't keep my interest. I did manage to observe and enjoy a few things during the night...

National Anthem - how classy to have a fabulous opera singer - maybe too classy for the Super Bowl?

Commercials - I missed most of the commercials during the game, but was interested to see which ones the advertising experts thought were the best. My favorites were their favorites, with the Budweiser puppy spot a runaway winner. Also, the Chrysler ad, with Bob Dylan, touched my heart since our automotive roots run deep here in Detroit and in my own family. I loved the line when it's made here, it's made with the one thing you can't import from anywhere else - American Pride.

Halftime Show - while I wasn't expecting too much from Bruno Mars, I will admit to being impressed with his showmanship. He wasn't the blockbuster performer I look forward to for a Super Bowl halftime show, but he was very entertaining. The Red Hot Chili Peppers seemed out of place on the stage with him, though I do like them.

 


Food - we had fabulous, delicious and even somewhat healthy food. My favorites were the fresh avocado and corn salsa and a beautiful antipasto platter.

 

 

I brought two dishes. First, I made these super easy Individual Veggie and Dip Cups - just ranch dressing, carrots and celery. Pinterest success :-)

 

 

Then, everyone seemed to enjoy an old favorite - Sweet and Spicy Chicken Bites. What could be better than chicken wrapped in bacon with a coating of brown sugar and chili powder?

11/2 lbs. chicken breast, cut in 1 inch cubes

1 lb. bacon, cut in thirds

2/3 cup brown sugar ( I used Splenda blend)

2 T chili powder

Wrap each chicken piece in bacon and secure with a toothpick. Mix together brown sugar and chili powder. Dredge bacon wrapped chicken in mixture and place on a broiler pan, sprayed with cooking spray. Bake at 350 degrees for 35 minutes or until bacon is crispy. Enjoy!

Happy Monday! Since I missed Downton Abbey and Sherlock my goal for the day is to avoid any and all spoilers until I have a chance to watch both :-)

  1. OH SO yummy! I will be making those chicken bites:) I couldn't watch the whole game, it was TOO lop-sided! The Anthem was awesome, several commercials were precious! I liked the Budweiser HERO's welcome! That was my favorite:) Enjoy your day dear friend, HUGS!

  2. Vicki... great minds think alike. Was not expecting anything great from Bruno but wow... he blew me away!!! The Chili Peppers have never been one of my favorites and I feel the same way. Your food looks great! Have a great week!

  3. Yummmm! That's what I missed about not having or going to a superbowl party ~ food!! : )
    I was expecting to find paul in front of the television when I got off of work last night.. and to my surprise, he was outside, in the garage with a fire blazing just chilling with music. ( Between the two of us, we're working a 1000 hrs a week)

  4. The Chicken Bite recipe sounds great. Saved into my Paprika file already.
    The game was certainly a blow out. (So much hype over Peyton Manning, I did feel bad for him.)
    I liked Renee Fleming but not the half time show . . . (But then, you didn't ask me what I thought did you!).

  6. Loved the idea of the individual ranch dressing dips! I did something similar for a Bridal Shower last Spring with individual 7 layer Mexican dip. Everyone loved it. Unfortunately for us, we were one of those whoe satellite stopped working at like 5:00 (central time) and it was nearly 45 minutes before we were directed to another station to catch the game, so we missed the National Anthem, but oh well! I didn't even know who she was. I stopped watching at half time and did not watch the half time show. I'm glad the Seahawks won!

  9. I have to admit that I use the Superbowl as an opportunity to do other things. Watched Downton. I had already seen the commercials so didn't miss anything. xo Laura

  12. Who needs a football game when there's friends, wine and great food? We actually turned the game off to watch Downton and I'm glad I did as we were rooting for the Broncos. What happened there?

  15. Looks like a lovely party. Unfortunately, our party was not as festive as it could have been since we are long-time Bronco fans. But still a good time and a good excuse to try out new recipes.
