Sugar Free Baked French Toast with Streusel Topping

 

 

Saturday was a beautiful day here - I worked in the yard cleaning up leaves and sticks and then spent the rest of the day sitting on my patio enjoying just being outside in the sun. But, all good things must end and since the forecast was predicting rain, all day on Sunday, I knew I would want something warm and cozy for breakfast.

I found a loaf of French bread in the freezer and used a combination of various french toast recipes that I adapted and turned into a healthier and sugar free version by using fat free milk and Splenda Brown Sugar. I find that now and then, breakfast can be my indulgence for the day when using a sugar substitute. Two pieces of this yummy french toast with a little sugar free syrup and my carb count remained in control.


Recipe for Sugar Free Baked French Toast with Streusel Topping

1 loaf french bread

4 eggs

1 3/4 cup fat free milk

1/4 cup brown sugar substitute

1/2 tsp. cinnamon

1/2 tsp vanilla

pinch salt

Struesel Topping

1/4 cup brown sugar substitute

1/2 cup flour

1/4 tsp. cinnamon

2 T butter, melted

pinch salt

 

Spray 9 x 13 baking dish with cooking spray. Slice bread into 1 inch slices and arrange in baking dish.

Whisk together eggs, milk, brown sugar substitute, cinnamon, vanilla and salt. Pour the milk mixture over the bread. Cover with saran wrap and refrigerate overnight.

Preheat oven to 350 dregrees.

In a small bowl, combine struesel ingredients and mix well with fork until crumbly. Sprinkle over soaked bread and bake 35 - 40 minutes until lightly browned.

  3. You're killing me!! LOL! That looks so scrumptious and to think I started a new program this morning. My weight seems like such a huge problem but I got a bit of encouragement. I did my BMI and it said I only need to lose 18 pounds to be in the "healthy" zone! Whaaaaaa?? And here I thought it was 40! Ha, ha! See how we distort our image! Anyway, I will print this out and put it away once I reach my goal. Thanks for sharing!!

  6. This looks so yummy! I thought of you on Sunday as I spotted a RHOBH "character" here in SoCal. Mohammed, Yolanda's ex was walking with one of their daughters in a famous high-end shopping district here. His hair is so unique and that's how I recognized him..... LOL. Ann
